It’s 5:15 pm, the kids are hungry, you have a headache, hubby is almost home, and the pantry has three things in it. What is your BEST last-minute meal recipe?
That question came from one of Shannon’s readers Lysa TerKeurst, who has an eggcellent blog!
Here’s what I would serve:
Chicken and Rice Casserole
Boneless, skinless chicken breasts
1 Cup of Uncle Ben’s Rice
1 package of Lipton Onion Soup Mix
2 cups of water
1/2 stick of butter
I know..she said 3 ingredients in the pantry, but I’m not counting the water or butter since those are staples around here.
Cut the chicken breasts into bite size pieces. Melt the butter and pour into the casserole dish. Stir soup mix with the water, then add it to the casserole dish. Add in the rice and chicken and give it a good final stir. Cover with foil and bake at 350 for 1 hour.

That should be very satisfying after one of those days.
I don’t know…where are the vegetables? Is it fair that you used extra ingredients? And is the fact that it takes an hour to cook really a last minute dish….(of course I am only kidding). I will be interested to see if anyone was able to come up with ‘balanced’ recipes with three items in the cabinet! They should get a gold medal!I am thinking takeout works better;) Have a great day…btw, your blog is looking good:)
