OK. I’m kidding. This is totally like every other taco soup recipe you see on the internet, but man, is it good! I have made 2 huge pots of this so far in the past couple of weeks and it is super easy and makes enough to have for a couple of meals.
TACO SOUP
2 pounds of ground beef
1 onion (diced)
2 cups of water
1 can of Rotel tomatoes (I always buy the mild)
1 can of kidney beans (more if you want)
1 can of diced tomatoes (2 cans if you want)
1 can of corn (more if you want)
1 package dry taco seasoning
1 package dry ranch dressing mix
Brown the ground beef and diced onion in a skillet and drain off the fat. Put ground beef into a big soup pot. Add the water and stir in all other ingredients. Bring to a boil, then simmer on low heat for about an hour, stirring occasionally.
We always top ours with shredded cheddar cheese, sour cream, and a little taco sauce. We also like to use tortilla chips to scoop it up with.
This is so perfect for those chilly nights when you’re not really in the mood to cook for a long period of time. And? It makes your house smell amazing!
